Norfolk chefs’ “coming out party” at launch of new book

Norfolk Table: One County, Twenty Chefs, by Tessa Allingham and Glynn Williams, charts the relationship between chefs and suppliers.

Each steps out of the kitchen to discover more about the journey from field or sea to fork.

“Norfolk produce is going from strength to strength,” said South West Norfolk MP and Lord Chancellor Liz Truss at today’s launch at the White Horse, in Brancaster Staithe.

Ms Truss, who said she celebrated the county’s food heritage at breakfast, lunch and dinner every day, added: “We’ve got some fantastic chfs but they hide their light under a bushel.

“Today is their coming out party, where they’re going to bring out this cookbook showcasing what they’re doing.”

Co-author Mr Williams said: “We’ve made the chefs walk the walk, rather than talk the talk. We’ve taken them out of their kitchens and made them understand the journey from field to fork. The whole book is 20 of those journeys.”

Chefs like the White Horse’s Fran Hartshorne reveal some of their favourite recipes, many of which have helped to put the county well and truly on the foodie map.

Contributors include Eric Snaith at Titchwell Manor, Gemma Arnold at Thornham Deli, Vanessa Scott at Strattons, Swaffham; Ben Handley at the Duck Inn at Stanhoe, Nik Hare at the Victoria at Holkham and Neil Rutland at the Norfolk Riddle, at Walsingham.

The book is on sale at the 20 profiled restaurants and retailers across the county, priced £19.95.
